Skinny Meals: Baked Mini Pumpkins

The following is taken from, “Skinny Meals: 50 Family-Friendly Meals under 300 Calories” by Samatha Brown.


  • 1 small sugar pumpkin
  • 1 tsp. brown sugar
  • 1/2 tsp. butter
  • 2 tsp. ground cinnamon


  1. Preheat over to 350 degrees F
  2. Cut the top of the pumpkins off and then scrape out the pumpkin seeds inside. Put brown sugar and butter inside pumpkins. Sprinkle with cinnamon. Return the lid to the pumpkin and position pumpkin in a baking dish with about an inch of water in ti’s bottom.
  3. Bake pumpkin at 350 for around thirty minutes or until pumpkin is tender, or in a microwave on high power for ten to fifteen minutes.
